If you are looking to avoid crowds, its tough. Find restaurants off the beaten track and at different times than are typical eating times. Avoid Bourbon street at night on the weekend, more of a crowd drinking scene anyway so if crowds aren't your thing, not really where you should be looking. The fact is that it is a popular place so it is tough to miss people, but strike out on your own and explore and there are some great things to see.
So many options to listen and enjoy music, not only on Bourbon Street but throughout the French Quarters and adjacent areas. Big plus is that for most places its free entry, so you can just go and enjoy the music without having to spend much money.
Don't be afraid to ask locals for suggestions! Bourbon street bartenders are a treasure trove of suggestions for places off ghe beaten path
Bourbon Street has the worst features of Spring Break at night, especially on weekends and during festivals/holidays.
