Stylist Parador. Comfortable room and beds. We had dinner in the restaurant and there were lots of options of tasty dishes to choose from. Excellent regional wine too. Staff were friendly and helpful too.

Stopped here for one night on our way down to Morocco on motorbikes. Not much to do in Merida (but we did get there quite late) but the Hotel Velada Mérida is easy to find with barriered secure parking next door. Parking is chargeable BUT if you're on a motorcycle, you can squeeze through the barrier (and the staff know it).
Room was comfortable and breakfast ample, except there was a coach party who had arrived at the same time as us for breakfast, so there was a bit of a queue.
Dinner can be served in their restaurant. Marginally on the expensive side, but it was a good meal. Bar in lobby is a godsend.
